Skinny Funfetti Cupcakes (actually made some of these this morning for a party)

-1 funfetti cake mix
-1 can Diet Sprite or 7-Up (I keep seeing people use Diet Cherry 7-Up, haven't tried that, I actually used a  Sprite Zero)

~mix the cake mix and diet soda of choice, pour into cupcake pan, bake at 350 for 20 minutes or so and you're done! Super easy and yummy, tastes just like the normal cupcakes, except these only have 110-125 calories depending on icing and they're vegan for those who live that lifestyle :)


Spinach Parmesan Cakes

  • -12 ounces fresh spinach
  • -1/2 cup part-skim ricotta cheese, or low-fat cottage cheese
  • -1/2 cup finely shredded Parmesan cheese, plus more for garnish
  • -2 large eggs, beaten
  • -1 clove garlic, minced
  • -1/4 teaspoon salt
  • -1/4 teaspoon freshly ground pepper
~Preheat oven to 400, remove stems from spinach (I use baby) and chop up finely. In medium bowl mix spinach, ricotta (or cottage cheese), Parmesan, eggs, garlic, salt and pepper; stir to combine.  Divide mixture into muffin pan cups, should be very full, bake until they're set, roughly 20 minutes.  Let stand 5 minutes then pop out of muffin pan and top with more Parmesan cheese.  Best when warm.
~141 calories for 2 cakes

*I've made these a couple of times, hubby and I are thinking of tweaking the recipe a bit to make them more fluffy, not quite sure yet what we're going to do, but if we figure out the perfect mixture I will update!
